Pumpkin Spice Cookies with Barry Callebaut's Ultimate White Chocolate Chips

You can never have enough pumpkin spice treats during the fall season, especially when they are created using Ultimate White Chocolate Chips #24106 from Barry Callebaut! Ingredients

  • 1 cup butter

  • 1 1/3 c brown sugar

  • 2/3 c sugar

  • 2 large egg yolk

  • 2 tsp vanilla extract

  • 2/3 c pumpkin puree (not pumpkin pie filling)

  • 3 c flour

  • 1 tsp salt

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • 1 tsp pumpkin spice

  • 2 c white chocolate chips

Directions

  • Cream softened butter and sugars until light and creamy.

  • Add in egg yolk, vanilla, and pumpkin puree, stirring until combined.

  • Stir in baking soda, salt, flour, cinnamon and pumpkin spice.

  • Fold in white chocolate chips.

  • Cover and chill dough 1 hour to overnight.

  • Preheat oven to 350 degrees.

  • Form cookie dough balls to desired sizes and place on lined cookie sheet and flatten slightly.

  • Bake 12-14 minutes, until edges are set and middle is mostly set.

  • Cool and enjoy!
