Lemon Curd

This recipe packs a punch of lemon flavour, using Nielsen Citrus' Frozen Bakers Lemon Puree Concentrate.


  • 3 large eggs

  • 2 tsp Froz'n Bakers Lemon Puree Concentrate #19004

  • 1 pinch of salt

  • Approx. 1/8 -1/4 c water for desired thickness

  • 6 tbsp unsalted butter

  • 1/2 tsp vanilla


  • In a medium sauce pan, whisk eggs, sugar, lemon puree, salt and water together

  • Add butter and cook over medium low heat until curd thickens

  • remove from heat and add vanilla

  • strain curd and store in a container with lid until fully chilled and set approx. 2 hours
